Zucchini Noodle Caprese Bowls

4 medium zucchinis

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, torn

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and pepper to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon red pepper flakes (optional for heat)

Instructions
 

Prepare Zucchini Noodles:

    - Use a spiralizer or a julienne peeler to transform the zucchinis into noodles (zoodles). If you don’t have either tool, simply slice the zucchinis thinly with a knife.

      Sauté the Zoodles:

        - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the zucchini noodles and sauté for 2-3 minutes until they just begin to soften. Be careful not to overcook; you want them to remain slightly crunchy. Season with salt, pepper, and garlic powder, if using. Remove from heat and set aside.

          Mix the Caprese Salad:

            - In a large bowl, combine the halved cherry tomatoes, mozzarella balls, and torn basil leaves. Drizzle with the remaining tablespoon of olive oil and balsamic glaze. Gently toss to combine. Season with salt, pepper, and red pepper flakes, if desired, for a bit of heat.

              Assemble the Bowls:

                - Divide the sautéed zucchini noodles among serving bowls. Top each bowl with the Caprese mixture. Drizzle with additional balsamic glaze if desired.

                  Garnish & Serve:

                    - Garnish with extra basil leaves or a sprinkle of Italian seasoning for extra flavor. Serve immediately while the zoodles are warm and the salad is fresh.
