2 large zucchinis

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 ripe avocado, diced

1 medium tomato, diced

¼ cup sliced black olives

2 green onions, thinly sliced

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

Fresh cilantro, for garnish

Salsa, for serving

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Slice the zucchinis into ¼-inch thick rounds. If they're particularly watery, lightly sprinkle with salt and let them sit for 10 minutes to draw out moisture, then pat dry with paper towels.

      Bake the Zucchini Rounds: Line a baking sheet with parchment paper and arrange the zucchini slices in a single layer. Bake in the preheated oven for about 15-20 minutes until slightly crispy, flipping them halfway through.

        Season the Beans: In a small bowl, mix the black beans with smoked paprika, garlic powder, cumin, salt, and pepper.

          Assemble the Nachos: Once the zucchini rounds are baked, remove them from the oven. Layer half of the zucchini slices on a large serving platter or baking dish. Top with half of the seasoned black beans, half of the cheddar cheese, diced tomatoes, and half of the sliced olives. Repeat with the remaining zucchini, beans, cheese, tomatoes, and olives.

            Bake Again: Return the assembled nachos to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and top with diced avocado, green onions, and fresh cilantro. Serve warm with salsa and a dollop of sour cream or Greek yogurt on the side.
