2 cups rolled oats

1/4 cup brown sugar (packed)

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

2 cups milk (dairy or non-dairy)

1/4 cup pure maple syrup (plus extra for drizzling)

1 large egg

3 tablespoons unsalted butter, melted (or coconut oil for a dairy-free option)

1 teaspoon vanilla extract

1 cup chopped pecans (plus extra for topping)

1 cup fresh or frozen blueberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish.

    Mix Dry Ingredients: In a large bowl, combine rolled oats, brown sugar, baking powder, cinnamon, and salt. Stir until evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the milk, maple syrup, egg, melted butter, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Add chopped pecans (and blueberries, if using) to the mixture and stir until everything is just combined.

          Transfer to Baking Dish: Pour the oatmeal mixture into the greased baking dish, spreading it out evenly.

            Bake: Place in the preheated oven and bake for 30-35 minutes, or until the edges are golden brown and the center is set.
