Ingredients

2 cups pancake mix

1 1/2 cups milk

2 large eggs

2 teaspoons vanilla extract

2 tablespoons melted butter

2 cups diced apples (about 2 medium-sized apples, peeled and cored)

1 teaspoon ground cinnamon

1/4 cup brown sugar

1/4 cup granulated sugar

1 tablespoon lemon juice

1/2 teaspoon nutmeg (optional)

1/4 cup chopped pecans or walnuts (optional)

Whipped cream or vanilla ice cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter.

Prepare the Apples: In a medium mixing bowl, combine the diced apples, brown sugar, granulated sugar, cinnamon, lemon juice, and nutmeg (if using). Toss until the apples are well coated. Set aside.

Mix the Batter: In a large bowl, whisk together the pancake mix, milk, eggs, vanilla extract, and melted butter. Mix until just combined; it’s okay if there are a few lumps.

Layer the Ingredients: Pour half of the pancake batter into the prepared baking dish, spreading it evenly. Next, sprinkle the apple mixture over the top of the batter. Finally, pour the remaining pancake batter over the apples to cover them.

Add Nuts (Optional): If you are using nuts, sprinkle them on top of the final layer of batter for added crunch.

Bake the Pancake Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the pancake bake is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Allow it to cool slightly for about 10 minutes. Cut into squares and serve warm with whipped cream or vanilla ice cream for an extra touch of indulgence.

Enjoy!: Dig in and savor the warm apple pie flavors in every delightful bite of this pancake bake!
