Ingredients

2 cups rolled oats

1 cup almond milk (or any milk of choice)

¼ cup maple syrup (or honey)

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

½ teaspoon baking powder

1 cup fresh strawberries, diced

¼ cup chopped nuts (optional: almonds or walnuts)

2 tablespoons chia seeds (optional)

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.

Mix Dry Ingredients: In a large bowl, combine rolled oats, baking powder, cinnamon, chia seeds, and salt. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until fully combined. Gently fold in the diced strawberries and chopped nuts if using.

Fill Muffin Tin: Spoon the oat mixture into the prepared muffin tin, filling each cup about ¾ full.

Bake: Place in the preheated oven and bake for 20-25 minutes, or until the tops are golden and the oats are set. A toothpick should come out clean or with a few moist crumbs.

Cool & Serve: Remove from the oven and let cool in the tin for about 10 minutes before transferring to a wire rack. Serve warm or at room temperature, and enjoy!

Storage: Store any leftovers in an airtight container in the refrigerator for up to 4 days. They can be reheated in the microwave for a quick breakfast!
