½ cup granulated sugar

½ cup brown sugar, packed

1 cup canned pumpkin puree (not pumpkin pie filling)

½ cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with oil or non-stick spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt until well combined. Set aside.

      Combine Sugars: In a separate bowl, mix the granulated sugar and brown sugar until well blended. This will help break up any clumps in the brown sugar.
