Strawberry Basil Lemonade Popsicles

2 cups fresh strawberries, hulled and chopped

1 cup fresh basil leaves, packed

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1/2 cup granulated sugar (adjust to taste)

2 cups water

Zest of 1 lemon

Instructions
 

In a medium saucepan, combine the water and granulated sugar over medium heat. Stir until the sugar completely dissolves. This will create a simple syrup. Remove from heat and let it cool.

    In a blender, add the chopped strawberries, fresh basil leaves, lemon juice, lemon zest, and cooled simple syrup. Blend until smooth. Taste the mixture and adjust the sweetness by adding more sugar if necessary.

      Strain the blended mixture through a fine-mesh sieve into a large bowl or pitcher to remove any pulp and basil remnants, resulting in a smooth liquid.

        Pour the strained strawberry basil lemonade mixture into popsicle molds, filling them about 3/4 full. Leave a small amount of space at the top for the mixture to expand as it freezes.

          Insert popsicle sticks into the molds and freeze for at least 4-6 hours, or until completely solid.
