Sticky Soy Glazed Salmon Wraps

Ingredients
  

2 salmon fillets (about 6 oz each)

1/4 cup soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tsp sesame oil

1 clove garlic, minced

1 inch piece of ginger, grated

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

4 large lettuce leaves (such as butter or romaine)

1 cup shredded carrots

1 avocado, sliced

1/4 cup fresh cilantro, chopped

2 green onions, sliced

Sesame seeds, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes to absorb the flavors.

      Cook the Salmon: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place the marinated salmon fillets on it. Bake for about 12-15 minutes until the salmon is cooked through and flakes easily.

        Prepare the Sticky Glaze: While the salmon is baking, pour the remaining marinade into a small saucepan. Bring it to a simmer on medium heat. Stir in the cornstarch slurry and continue to simmer until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.

          Assemble the Wraps: Once the salmon is done cooking, remove it from the oven and brush generously with the sticky glaze. Allow it to rest for a few minutes.

            Create Your Wraps: On each lettuce leaf, place a portion of the glazed salmon. Top with shredded carrots, sliced avocado, chopped cilantro, and sliced green onions.

              Serve: Drizzle any remaining sticky glaze over the filled wraps. Sprinkle with sesame seeds and serve with lime wedges on the side for an extra zing.
