1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of 1 lime

4 whole wheat tortilla wraps

½ cup plain Greek yogurt (or vegan alternative for a dairy-free option)

Extra lime wedges for serving

Preheat the oven: Start by preheating your oven to 400°F (200°C).

    Prepare the chickpeas: In a mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, cayenne pepper, garlic powder, ground cumin, salt, and pepper. Toss until the chickpeas are well coated.

      Roast the chickpeas: Spread the chickpeas evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until crispy and golden, shaking the pan halfway through to ensure even cooking.

        Mix the salad: While chickpeas are roasting, prepare the salad. In a large bowl, combine the cherry tomatoes, cucumber, red onion, avocado, cilantro, lime juice, and season with salt and pepper to taste. Gently toss the mixture to combine without mashing the avocado.
