Spicy Cajun Shrimp and Grits Cups

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 tablespoon lemon juice

2 cloves garlic, minced

2 green onions, sliced (for garnish)

For the Grits:

1 cup stone-ground grits

4 cups chicken broth

1 cup heavy cream

1 cup sharp cheddar cheese, shredded

1/2 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons butter

Fresh parsley, chopped (for garnish)

For the Cups:

12 mini phyllo pastry cups (store-bought)

Instructions
 

Prepare the Grits:

    - In a pot, bring the chicken broth to a boil over medium heat. Stir in the grits, reduce the heat to low, cover, and let them simmer for about 15-20 minutes, stirring occasionally until thickened.

      - Once the grits are cooked, stir in the heavy cream, butter, garlic powder, and cheddar cheese. Mix until creamy and season with salt and pepper to taste. Set aside.

        Cook the Shrimp:

          - In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

            - Add the shrimp to the skillet, followed by the Cajun seasoning, paprika, cayenne pepper, salt, and black pepper. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque.

              - Remove from heat, drizzle with lemon juice, and toss to combine.

                Assemble the Cups:

                  - Preheat your oven to 350°F (175°C). Place the mini phyllo cups on a baking sheet.

                    - Spoon a generous amount of the cheesy grits into each phyllo cup, filling them about halfway.

                      - Top each cup with a few pieces of the spicy shrimp.

                        Bake:

                          - Place the filled cups in the preheated oven and bake for 5-7 minutes, just until the phyllo is golden and crisp.

                            Serve:

                              - Remove from the oven and let them cool slightly. Garnish with sliced green onions and chopped parsley before serving.
