Slow Cooker Turkey and Sweet Potato Chili

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) diced tomatoes (with juices)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cups vegetable or chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1 tsp oregano

Salt and black pepper to taste

Optional toppings: chopped cilantro, avocado, shredded cheese, lime wedges

Prepare the Ingredients: Begin by prepping all your ingredients: peel and dice sweet potatoes, chop the onion and bell pepper, and mince the garlic.

    Sauté the Turkey (Optional): In a skillet, on medium heat, brown the ground turkey until no longer pink (about 5-7 minutes). Drain any excess fat if needed. (This step is optional, and you can add raw turkey straight to the slow cooker for a more hands-off approach.)

      Combine in Slow Cooker: In your slow cooker, add the diced sweet potatoes, black beans, kidney beans, diced tomatoes (with juices), sautéed ground turkey (if using), diced onion, garlic, and bell pepper.

        Add Spices and Broth: Pour in the vegetable or chicken broth. Add chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir well to combine all ingredients.

          Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the sweet potatoes are tender and flavors meld together.

            Serve: Once cooked, taste and adjust seasoning if needed. Serve hot, garnishing with your choice of toppings such as cilantro, avocado, shredded cheese, or lime wedges.

              Store Leftovers: If you have leftovers, let the chili cool completely before transferring to an airtight container. It will keep in the refrigerator for up to 4 days or can be frozen for up to 3 months.
