1 teaspoon salt

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces cremini mushrooms, sliced

1 cup chicken broth

1 cup heavy cream

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season both sides of the pork chops with salt and black pepper.

    Sear the Pork Chops: In a skillet over medium-high heat, add the olive oil. Once hot, sear the pork chops for about 3-4 minutes on each side until they are nicely browned. Remove from the skillet and place them in the slow cooker.

      Sauté the Aromatics: In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms soften.

        Combine the Sauce Ingredients: In a bowl, whisk together the chicken broth, heavy cream, Worcestershire sauce, thyme, rosemary, and Dijon mustard. Pour this mixture over the pork chops in the slow cooker.

          Cook: Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours, until the pork chops are tender and cooked through.
