Roasted Veggie Couscous Bowl with Feta

1 cup couscous

1 1/4 cups vegetable broth or water

1 red bell pepper, diced

1 zucchini, sliced

1 cup cherry tomatoes, halved

1 small red onion, diced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Optional: 1/4 teaspoon chili flakes for heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: Spread the diced bell pepper, sliced zucchini, halved cherry tomatoes, and diced onion on a large baking sheet. Drizzle with olive oil, and sprinkle dried oregano, garlic powder, salt, and pepper over the top. Toss to coat everything evenly.

      Roast the Vegetables: Bake in the preheated oven for about 25–30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through to ensure even cooking.

        Cook the Couscous: While the vegetables are roasting, bring the vegetable broth (or water) to a boil in a medium saucepan. Once boiling, add the couscous, stir, cover, and remove from heat. Let it sit for about 5 minutes until the couscous absorbs the liquid.

          Fluff the Couscous: After 5 minutes, uncover the couscous and fluff it with a fork. Add lemon juice, salt, and pepper to taste, and mix well.
