Ingredients

1 cup rolled oats

1 ½ cups almond milk (or milk of your choice)

1 medium ripe peach, diced

½ teaspoon cinnamon

¼ teaspoon vanilla extract

2 tablespoons maple syrup (or honey)

¼ cup Greek yogurt (optional for creaminess)

2 tablespoons chopped pecans (or walnuts)

Pinch of salt

Instructions

In a medium-sized bowl, combine the rolled oats, almond milk, cinnamon, vanilla extract, maple syrup, and a pinch of salt. Stir until well mixed.

Gently fold in the diced peach, reserving a few pieces for topping later if desired.

If you’re using Greek yogurt for added creaminess, stir it in at this point until fully incorporated.

Divide the mixture evenly into two airtight jars or containers. Seal the containers and refrigerate overnight (or for at least 4 hours).

In the morning, give the oats a good stir and add a splash more almond milk if you prefer a thinner consistency.

Top with reserved peach pieces, chopped pecans, and a sprinkle of extra cinnamon if desired.

Enjoy your delicious Peach Cobbler Overnight Oats cold, or warm them up in the microwave for 30-60 seconds for a cozy breakfast!
