1 lb Kielbasa, sliced into bite-sized pieces

1.5 lbs baby potatoes, halved

1 red bell pepper, chopped

1 yellow onion, diced

3 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Ingredients: In a large bowl, combine the halved baby potatoes, chopped red bell pepper, diced onion, and minced garlic. Drizzle with olive oil and season with smoked paprika, dried oregano, salt, and pepper. Toss to coat evenly.

      Combine with Kielbasa: Add the sliced Kielbasa to the bowl and toss everything together until well mixed.

        Transfer to Baking Dish: Spread the potato and Kielbasa mixture evenly in a large rimmed baking sheet or oven-safe skillet.
