1 cup creamy peanut butter (natural or regular)

1/2 cup coconut oil (melted)

1/4 cup maple syrup (or honey for a non-vegan option)

1 teaspoon vanilla extract

1 1/2 cups dark chocolate chips (dairy-free if desired)

A pinch of sea salt

Optional: 1/4 cup crushed nuts (for topping)

Instructions
 

Prepare the Cupcake Liners: Line a muffin tin with paper cupcake liners. This will make it easy to remove the cups once they’re set.

    Make the Peanut Butter Mixture: In a separate bowl, combine the creamy peanut butter, melted coconut oil, maple syrup, and vanilla extract. Stir until smooth and well mixed. If you prefer a little crunch, mix in the crushed nuts.

      Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until fully melted and smooth. Be careful not to overheat!

        Assemble the Cups: Spoon about 1 to 2 tablespoons of the melted chocolate into the bottom of each cupcake liner, ensuring the bottom is completely covered. Use a spoon to spread the chocolate slightly up the sides.
