Mini Grilled Chicken Flatbreads

Ingredients
  

1 lb chicken breast, boneless and skinless

4 whole wheat flatbreads or pita breads

1 cup Greek yogurt

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

1 cup mixed greens (spinach, arugula, or your choice)

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

Feta cheese, crumbled (optional)

Fresh parsley for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, cumin, salt, and pepper.

      - Add the chicken breasts to the marinade, making sure they are well-coated. Cover and let marinate in the refrigerator for at least 1 hour, or preferably overnight for deeper flavor.

        Grill the Chicken:

          - Preheat your grill or grill pan over medium-high heat.

            - Remove the chicken from the marinade and grill for approximately 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes.

              - Slice the grilled chicken into thin strips.

                Prepare the Flatbreads:

                  - While the chicken is resting, place the flatbreads on the grill for about 1-2 minutes on each side, just until warmed and with slight grill marks. Alternatively, you can warm them in a skillet over medium heat.

                    Assemble the Flatbreads:

                      - Spread a layer of Greek yogurt onto each warmed flatbread as a base.

                        - Top with a handful of mixed greens, sliced grilled chicken, halved cherry tomatoes, and red onion slices.

                          - If desired, sprinkle crumbled feta cheese on top for an extra burst of flavor.

                            Garnish and Serve:

                              - Drizzle a bit more olive oil and a splash of lemon juice over the assembled flatbreads, followed by freshly chopped parsley for garnish.

                                - Slice the flatbreads into manageable pieces and serve immediately, either warm or at room temperature.
