But as I thought about how to elevate this classic dish, I remembered my love for tater tots—a nostalgic favorite from childhood. 1 lb ground chicken

1 packet taco seasoning

1 cup cooked black beans, drained and rinsed

1 cup frozen corn

2 cups shredded cheddar cheese (divided)

1 cup diced tomatoes (fresh or canned, drained)

1 cup sour cream

1 bag (32 oz) frozen tater tots

1 jalapeño, sliced (optional for spice)

1/4 cup chopped green onions

Fresh cilantro, for garnish (optional)

Olive oil, for cooking

Instructions
 

Preheat the oven to 400°F (200°C).

    Cook the chicken: In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground chicken and cook for about 5-7 minutes until browned and cooked through. Stir in the taco seasoning and a splash of water, mixing well to coat the chicken. Cook for an additional 2-3 minutes to thicken.

      Prepare the base: In a large mixing bowl, combine the cooked chicken, black beans, corn, half of the shredded cheddar cheese, and diced tomatoes. Stir until everything is well combined.

        Layer the tater tots: In a baking dish (approximately 9x13 inches), arrange half of the frozen tater tots in a single layer across the bottom.

          Add the chicken mixture: Spoon the chicken mixture evenly over the layer of tater tots.

            Add sour cream: Dollop the sour cream over the chicken mixture, spreading gently to cover as much surface area as possible.

              Add remaining tater tots: Layer the remaining tater tots on top of the sour cream layer, covering it evenly.

                Bake: Place the baking dish in the oven and bake for 25 minutes or until the tater tots are crispy and golden brown.

                  Top with cheese: Remove from the oven and sprinkle the remaining cheddar cheese over the top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                    Add final touches: Once baked, remove from the oven and let it cool for a few minutes. Top with jalapeño slices (if using), chopped green onions, and fresh cilantro for garnish.

                      Serve and enjoy: Serve warm, enjoy the delicious melted cheese and flavorful toppings, and dig in with tortilla chips or just a fork!
