Lemon Ricotta and Pea Pasta Skillet

8 oz (225g) of pasta (your choice, such as fettuccine or penne)

1 cup (250g) fresh ricotta cheese

1 cup (150g) green peas (fresh or frozen)

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 large lemon

1/4 cup (60ml) vegetable broth or pasta water

1/4 cup (25g) grated Parmesan cheese

Salt and pepper, to taste

Fresh basil or mint leaves, for garnish

Optional: Red pepper flakes, for a spicy kick

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Base: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Peas: Add the peas to the skillet, stirring them with the garlic for about 2-3 minutes until they are tender. If you’re using frozen peas, ensure they are heated through.

        Combine Ingredients: Lower the heat and add the cooked pasta to the skillet along with the ricotta cheese, lemon zest, lemon juice, and the reserved vegetable broth or pasta water. Mix everything together gently until combined and creamy.

          Season It Up: Stir in the grated Parmesan cheese and season with salt and pepper to taste. Adjust the consistency with more pasta water if needed to achieve your desired creaminess.
