Ingredients

1 lb ground beef

6 slices of bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (fresh or canned)

1 cup ketchup

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 tsp Worcestershire sauce

1 tsp yellow mustard

1 tsp paprika

Salt and pepper to taste

8 oz elbow macaroni or pasta of choice

1/2 cup pickles, chopped (optional)

2 green onions, sliced (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni until al dente according to package directions. Drain and set aside.

Brown the Meat: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving a small amount of grease in the skillet. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Sauté Vegetables: Add the diced onion and minced garlic to the skillet with the beef, cooking until the onions are translucent and fragrant, about 3-4 minutes.

Combine Ingredients: Stir in the diced tomatoes, ketchup, Worcestershire sauce, yellow mustard, paprika, and season with salt and pepper. Mix well and let simmer for about 5 minutes to meld the flavors.

Mix in Pasta and Cheese: In a large mixing bowl, combine the cooked macaroni, beef mixture, half of the cheddar cheese, half of the mozzarella cheese, and half of the crispy bacon. If using pickles, add them in at this stage as well.

Transfer to Casserole Dish: Pour the entire mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

Top with Cheese and Bacon: Sprinkle the remaining cheddar and mozzarella cheese over the top of the casserole. Then, sprinkle the remaining bacon pieces on top.

Bake: Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake uncovered for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Let it Rest: Remove the casserole from the oven and let it sit for about 5 minutes to cool slightly. Garnish with sliced green onions before serving.
