Grilled Teriyaki Chicken with Pineapple

4 boneless, skinless chicken thighs

1 cup teriyaki sauce (homemade or store-bought)

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon honey (optional, for extra sweetness)

1 small pineapple, peeled, cored, and cut into rings

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, whisk together the teriyaki sauce, grated ginger, minced garlic, sesame oil, rice vinegar, and honey (if using). Reserve 1/4 cup of the marinade for basting later. Place the chicken thighs in a zip-top bag or shallow dish and pour in the marinade. Ensure all pieces are coated, then seal the bag (or cover the dish) and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Grill: Preheat your grill to medium-high heat (around 400°F). If using a charcoal grill, arrange the coals for direct heat.

      Grill the Chicken: Remove the chicken from the marinade and discard the used marinade (as it’s contaminated). Season the chicken lightly with salt and pepper. Place the chicken thighs on the grill, cooking for about 5-6 minutes per side, basting with the reserved marinade every couple of minutes, until the internal temperature reaches 165°F and the chicken has nice grill marks.

        Grill the Pineapple: While the chicken is grilling, place the pineapple rings directly on the grill. Grill for about 2-3 minutes on each side until those beautiful grill marks appear and the pineapple softens slightly. Remove from the grill and set aside.

          Serve: To plate, place a grilled chicken thigh on a serving plate topped with a grilled pineapple ring. Drizzle with additional teriyaki sauce if desired. Sprinkle chopped green onions and sesame seeds on top for garnish.
