Ingredients

1 pound large shrimp, peeled and deveined

2 ripe peaches, pitted and cut into wedges

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh basil or mint leaves, for garnish

Skewers (wooden or metal)

Instructions

Prep the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

Marinate the Shrimp: In a large bowl, combine olive oil, honey, lime juice, minced garlic, smoked paprika, salt, and black pepper. Add the peeled shrimp and toss to coat them evenly. Let it marinate for at least 15-20 minutes.

Assemble the Skewers: Thread the marinated shrimp and peach wedges onto the skewers, alternating between shrimp and peach for a nice presentation.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F). Oil the grill grates lightly to prevent sticking.

Grill the Skewers: Place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp are pink and opaque and the peaches are slightly charred. Be careful not to overcook the shrimp.

Serve and Garnish: Remove the skewers from the grill and let them rest for a minute. Garnish with fresh basil or mint leaves before serving.

Enjoy: Serve the grilled shrimp and peach skewers warm as a delightful appetizer or main dish, paired with a refreshing salad or a side of rice.
