Grilled Corn Salad with Lime Dressing

Ingredients
  

4 large ears of fresh corn, husked

1 medium red bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for spiciness)

1 avocado, diced

1 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled

2 tablespoons olive oil

Juice of 2 limes

Zest of 1 lime

Salt and pepper, to taste

Instructions
 

Preheat your grill to medium-high heat.

    Lightly brush the ears of corn with olive oil and season with salt and pepper.

      Place the corn directly on the grill grates and grill for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through. Remove from the grill and let cool slightly.

        Once cool enough to handle, use a sharp knife to carefully cut the kernels off the cob and place them in a large mixing bowl.

          Add the diced red bell pepper, cherry tomatoes, red onion, jalapeño, avocado, and cilantro to the bowl with the corn.

            In a small bowl, whisk together the olive oil, lime juice, lime zest, and a pinch of salt and pepper.

              Pour the lime dressing over the salad and toss gently to combine all ingredients evenly.

                Sprinkle the crumbled feta cheese on top and give the salad one last gentle toss.

                  Serve immediately or refrigerate for about 30 minutes to let the flavors meld together.
