2 cups fresh corn kernels (about 4 ears of corn, grilled and cut off the cob)

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon smoked paprika

2 large eggs

1/3 cup milk

1/4 cup chopped fresh cilantro (or parsley)

1/4 cup finely chopped red bell pepper

1/4 cup finely chopped green onion

Vegetable oil for frying

For the Lime Crema:

1/2 cup sour cream

1/4 cup mayonnaise

Zest of 1 lime

2 tablespoons fresh lime juice

Salt to taste

1 teaspoon chopped fresh cilantro (optional, for garnish)

Grill the Corn: Start by preheating your grill to medium-high heat. Grill the corn until charred and cooked through, about 10-12 minutes, turning occasionally. Let it cool and then cut the kernels off the cob.

    Prepare the Lime Crema: In a bowl, mix together the sour cream, mayonnaise, lime zest, lime juice, and a pinch of salt. Adjust seasoning to taste. If desired, fold in chopped cilantro for an extra burst of flavor. Set aside in the refrigerator to chill.
