Ingredients

6 bone-in, skin-on chicken thighs

6 cloves of garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

1 lemon (zested and juiced)

3 tablespoons olive oil

Salt and pepper to taste

1 cup chicken broth or white wine (optional, for added moisture)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Marinade: In a large mixing bowl, combine the minced garlic, rosemary, thyme, parsley, oregano, lemon zest, lemon juice, and olive oil. Season with salt and pepper, and stir well to combine.

Marinate the Chicken: Pat the chicken thighs dry with paper towels. Add the chicken thighs to the marinade, ensuring each piece is generously coated. Let the chicken marinate for at least 30 minutes, or up to overnight in the refrigerator for more flavor.

Arrange in the Baking Dish: If using chicken broth or white wine, pour it into a large baking dish. Place the marinated chicken thighs skin-side up in the dish.

Roasting: Roast the chicken thighs in the preheated oven for 35-45 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). If the skin isn’t crispy enough, you can broil for an additional 3-5 minutes.

Rest and Serve: Once cooked, remove the dish from the oven and let the chicken rest for 5-10 minutes. This allows the juices to redistribute. Serve hot, spooning the pan juices over the chicken for added flavor.
