2 cups fresh pineapple chunks (frozen is fine too)

1 can (13.5 oz) full-fat coconut milk

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon pure vanilla extract

1 tablespoon fresh lime juice

Pinch of salt

Optional: toasted coconut flakes for garnish

Blend the Base: In a high-speed blender, combine the pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, lime juice, and a pinch of salt. Blend on high until the mixture is completely smooth and creamy. Taste and adjust sweetness if desired.

    Prepare Molds: Pour the blended mixture into popsicle molds. Leave a little space at the top for expansion as they freeze. If you’re using a stick, insert it according to the mold’s instructions.

      Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until fully set. For best results, freeze overnight.
