Fresh Tomato & Basil Flatbread

Ingredients
  

2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon salt

1 tablespoon olive oil

3/4 cup warm water (around 110°F or 43°C)

2 medium ripe tomatoes, thinly sliced

1 cup fresh basil leaves, torn

1 cup mozzarella cheese, shredded

1 tablespoon balsamic glaze (for drizzling)

Freshly ground black pepper, to taste

Extra virgin olive oil, for brushing

Instructions
 

Make the Dough: In a large mixing bowl, combine the flour, instant yeast, and salt. Gradually add the warm water and olive oil, stirring until a rough dough forms.

    Knead: Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until the dough becomes smooth and elastic.

      First Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise for about 1 hour in a warm place, or until doubled in size.

        Preheat Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

          Shape the Flatbread: Once risen, punch down the dough to release the air. Divide the dough into two equal pieces. Roll each piece out into a flat oval or rectangle on a floured surface, about 1/4 inch thick.

            Toppings: Transfer the flatbread to a baking sheet or a pizza peel (if using a stone). Brush the surface lightly with olive oil, then evenly distribute the shredded mozzarella cheese, followed by the sliced tomatoes and torn basil leaves. Season with freshly ground black pepper.

              Bake: If using a pizza stone, carefully transfer the flatbread onto the stone. Bake for 10-12 minutes, or until the edges are golden and the cheese is bubbly. If using a baking sheet, place it in the oven and bake accordingly.

                Garnish: Once out of the oven, drizzle the flatbreads with balsamic glaze and let cool for a couple of minutes. Slice and serve warm.
