Ingredients

1 block (14 oz) firm tofu, pressed and drained

2 tablespoons cornstarch

3 tablespoons sesame oil (divided)

2 tablespoons soy sauce

2 tablespoons maple syrup

1 teaspoon rice vinegar

1 teaspoon sriracha (adjust to taste)

1 cup cooked brown rice or quinoa

1 cup steamed broccoli florets

1 cup shredded carrots

1/2 cup red cabbage, thinly sliced

1/4 cup green onions, chopped

2 tablespoons sesame seeds

Fresh cilantro for garnish (optional)

Instructions

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes. In a mixing bowl, toss the tofu cubes in cornstarch, ensuring they are evenly coated.

Fry the Tofu: Heat 2 tablespoons of sesame oil in a non-stick skillet over medium-high heat. Add the tofu cubes in a single layer. Cook for about 3-4 minutes on each side until they are golden and crispy. Remove from heat and set aside.

Make the Sauce: In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, and sriracha. Adjust the levels of sriracha based on your preferred spice level.

Combine Tofu and Sauce: In the same skillet you used to fry the tofu, reduce the heat to low. Pour the sauce over the crispy tofu, stirring gently to coat the tofu evenly without breaking the cubes. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Assemble the Bowl: In a serving bowl, start with a base of cooked brown rice or quinoa. Add a generous portion of the saucy tofu on top.

Add Veggies: Layer on the steamed broccoli, shredded carrots, and sliced red cabbage around the tofu.

Garnish: Sprinkle the bowl with chopped green onions, sesame seeds, and fresh cilantro, if desired.

Serve and Enjoy: Your crunchy sesame tofu bowl is ready to be served! Drizzle with a touch more sesame oil if you like and enjoy your vibrant, nourishing dish.
