Crunchy Sesame Crusted Tofu

1 block (14 oz) firm tofu, pressed and drained

1/2 cup all-purpose flour

1/2 cup non-dairy milk (or regular milk)

1 cup panko breadcrumbs

1/2 cup sesame seeds (white & black for contrast)

2 tablespoons soy sauce

1 tablespoon maple syrup

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Cooking oil (for frying)

Prep the Tofu: Cut the pressed tofu into 1-inch cubes or slabs, depending on your preference. Pat them dry with paper towels to remove excess moisture.

    Make the Dipping Station: Set up three shallow bowls:

      - In the first bowl, mix flour with a pinch of salt and pepper.

        - In the second bowl, whisk together non-dairy milk, soy sauce, maple syrup, garlic powder, onion powder, and smoked paprika.

          - In the third bowl, combine the panko breadcrumbs and sesame seeds.

            Coat the Tofu: Dip each tofu piece first in the flour mixture, ensuring it's fully coated and shaking off any excess. Next, dip it into the wet mixture, allowing it to fully soak for a moment. Finally, roll it in the panko-sesame mixture, pressing gently to ensure it adheres well. Repeat with all pieces.

              Heat the Oil: In a large skillet, heat about 1/4 inch of cooking oil over medium heat until shimmering.

                Fry the Tofu: Carefully place the coated tofu pieces in the hot oil, ensuring not to overcrowd the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy. You may need to do this in batches depending on the size of your skillet.

                  Drain and Serve: Once all the tofu is fried, transfer them to a paper towel-lined plate to drain any excess oil.

                    Serve Hot: Drizzle with extra soy sauce or your favorite dipping sauce and serve hot as an appetizer or main dish.
