Growing up, my family had a ritual of preparing vibrant salads to accompany our meals, especially during the warm summer months. Among these, one of my absolute favorites was a cucumber salad that had just the right amount of zest and crunch. Today, I’ve put my own spin on that nostalgic dish, creating the Crunchy Chili Lime Cucumber Salad. This salad is not only visually appealing with its vibrant colors, but it also bursts with zesty flavors and a delightful crunch. It’s the perfect side dish for barbecues, picnics, or even a light lunch on a hot day.

Crunchy Chili Lime Cucumber Salad

Ingredients
  

2 large cucumbers, thinly sliced

1/2 red onion, thinly sliced

1 red bell pepper, finely chopped

1/4 cup fresh cilantro, chopped

1-2 fresh jalapeños, seeded and finely diced (adjust to taste)

Zest and juice of 2 limes

1 tablespoon fish sauce (optional, or use soy sauce for a vegetarian version)

1 tablespoon honey or agave syrup

1 teaspoon ground chili powder (or to taste)

Salt and black pepper to taste

1/4 cup roasted peanuts, crushed, for topping

Lime wedges, for serving

Instructions
 

Prepare the Vegetables: Start by washing the cucumbers and slicing them thinly. You can use a mandoline slicer for even thickness. Slice the red onion and finely chop the red bell pepper and jalapeños.

    Make the Dressing: In a small bowl, whisk together the lime juice, lime zest, fish sauce (or soy sauce), honey (or agave), and chili powder. Taste and adjust the seasoning with salt and black pepper. The dressing should balance sweetness, tang, and heat.

      Combine Ingredients: In a large mixing bowl, combine the sliced cucumbers, red onion, red bell pepper, diced jalapeños, and chopped cilantro. Pour the dressing over the salad mix.

        Toss to Combine: Gently toss everything together until all the vegetables are evenly coated in the dressing. This will help the flavors meld together beautifully.

          Chill: Let the salad sit in the refrigerator for at least 15-20 minutes, allowing the flavors to develop. It can be made a few hours in advance if desired.

            Serve: Before serving, give the salad a final toss and sprinkle the crushed roasted peanuts on top for that crunchy texture. Serve with lime wedges for an extra zing.
