Crockpot Sweet Potato Turkey Stew

1 pound turkey breast, cut into bite-sized pieces

2 large sweet potatoes, peeled and diced

3 medium carrots, sliced

2 celery stalks, chopped

1 onion, diced

4 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

4 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 cup frozen green beans

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, heat the olive oil. Add the diced turkey breast and sear until lightly browned, about 5-7 minutes. This step enhances the flavor but can be skipped for a quicker meal.

    Transfer the browned turkey to the Crockpot. Add the sweet potatoes, carrots, celery, onion, and garlic. Stir well to combine.

      Pour in the can of diced tomatoes with their juices and the chicken broth.

        Sprinkle in the dried thyme, oregano, smoked paprika, salt, and pepper. Give everything a good stir to make sure all ingredients are evenly distributed.

          Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the turkey is tender and the sweet potatoes are cooked through.

            About 30 minutes before serving, stir in the frozen green beans. Cover again and allow to cook until heated through.

              Once the stew is ready, taste and adjust seasonings if necessary. Serve hot, garnished with fresh parsley for a pop of color and freshness.
