For the fritters:

2 cups sweetcorn kernels (fresh or frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup finely chopped red bell pepper

1/4 cup green onions, thinly sliced

1/4 cup grated cheddar cheese (optional)

1 large egg, beaten

1 tsp baking powder

1/2 tsp smoked paprika

1/2 tsp garlic powder

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (optional)

Vegetable oil for frying

For the chili yogurt:

1 cup plain Greek yogurt

1 tbsp extra virgin olive oil

1-2 tbsp chili paste or sriracha (adjust to taste)

1 tsp lemon juice

Prepare the Chili Yogurt: In a bowl, mix the Greek yogurt, olive oil, chili paste or sriracha, lemon juice, and a pinch of salt. Adjust the chili amount based on your heat preference. Set aside.

    Make the Fritter Batter: In a large mixing bowl, combine the sweetcorn kernels, all-purpose flour, cornmeal, chopped red bell pepper, green onions, and grated cheddar cheese (if using).

      Add the Wet Ingredients: In a separate small bowl, whisk together the beaten egg, baking powder, smoked paprika, garlic powder, salt, and pepper. Pour this mixture over the dry ingredients and stir gently until just combined. If using, fold in the chopped cilantro. The consistency should be thick but pourable.

        Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. You can test if it's ready by dropping a small spoonful of the batter into the oil; it should sizzle immediately.
