1 lb ground chicken

1 cup water chestnuts, finely chopped

2 green onions, finely sliced

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon ginger, minced

1 tablespoon vegetable oil (for cooking)

1 head of iceberg lettuce or butter lettuce, leaves separated

Optional toppings: crushed peanuts, cilantro, lime wedges, extra sriracha

Instructions
 

Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add in the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

    Cook the Chicken: Add the ground chicken to the skillet. Use a spatula to break it into smaller pieces as it cooks. Sauté for about 5-7 minutes, or until the chicken is fully cooked and no longer pink.

      Add Flavor: Stir in the chopped water chestnuts, green onions, soy sauce, hoisin sauce, sriracha, rice vinegar, and sesame oil. Cook for an additional 2-3 minutes, ensuring all ingredients are well mixed and heated through.

        Taste and Adjust: Taste the mixture and adjust seasoning and spice levels by adding more sriracha if desired. Remove the skillet from heat.

          Prepare the Lettuce: While the chicken is cooking, wash and separate the lettuce leaves carefully. Pat them dry with a cloth or paper towel.

            Assemble the Wraps: Spoon a generous amount of the spicy chicken mixture into each lettuce leaf, creating a wrap.

              Garnish & Serve: Top with crushed peanuts, extra chopped green onions, and cilantro if desired. Serve with lime wedges and an extra drizzle of sriracha on the side for those who want more heat.
