Crispy Chicken Fajita Wraps

Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

1 cup shredded mozzarella cheese (or cheese of choice)

4 large flour tortillas

Optional: Sour cream, guacamole, or salsa for serving

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine chicken strips, olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss until the chicken is well-coated. Allow it to marinate for at least 30 minutes in the refrigerator to absorb the flavors.

      Cook the Chicken:

        Heat a large skillet or frying pan over medium-high heat. Once hot, add the marinated chicken strips and cook for about 6-8 minutes until they are golden brown and crispy on the outside, stirring occasionally.

          Add the Vegetables:

            Add the sliced bell peppers and onion to the skillet with the cooked chicken. Stir-fry for an additional 5-7 minutes, until the vegetables are tender yet slightly crisp.

              Assembly:

                Warm the flour tortillas briefly in a separate dry skillet or microwave. Lay one tortilla flat and add a portion of the chicken and vegetable mixture in the center. Sprinkle with shredded cheese.

                  Wrap it Up:

                    Fold in the sides of the tortilla and roll it tightly from the bottom upwards to create a wrap. Repeat with remaining tortillas and filling.

                      Crispy Finish:

                        For an extra crispy wrap, wipe down the skillet, add a bit of oil, and return the wrapped fajitas to the skillet seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.

                          Serve:

                            Slice each wrap in half and serve with sour cream, guacamole, or salsa for dipping.
