1 large eggplant

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ cup grated Parmesan cheese (optional for extra flavor)

Fresh herbs (like parsley or basil) for garnishing (optional)

Instructions
 

Prepare the Eggplant:

    - Wash and dry the eggplant. Slice it into thin rounds, about 1/8 inch thick. If you prefer a more intense flavor, you can sprinkle the slices lightly with salt and allow them to sit for about 30 minutes to draw out excess moisture and bitterness. Rinse, pat dry, and proceed to the next step.

      Season the Slices:

        - In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the eggplant slices to the bowl and toss well to ensure each slice is evenly coated in the seasoning mixture.

          Preheat the Air Fryer:

            - Preheat your air fryer to 375°F (190°C) for about 3-5 minutes. This will help achieve maximum crispiness.

              Air Fry the Chips:

                - Lay the seasoned eggplant slices in a single layer in the air fryer basket, making sure not to overcrowd them (you may need to do this in batches).

                  - Air fry the eggplant slices for about 12-15 minutes, flipping them halfway through. Keep an eye on them, as cooking times may vary by air fryer.

                    Add Parmesan (optional):

                      - If you're using Parmesan cheese, sprinkle it over the eggplant chips during the last 2-3 minutes of cooking for a cheesy finish.

                        Cool and Serve:
