Creamy Tuscan Chicken Gnocchi

1 pound (450g) gnocchi (store-bought or homemade)

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) sun-dried tomatoes, chopped

2 cups (60g) fresh spinach, roughly chopped

1 teaspoon Italian seasoning

½ cup (50g) grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions
 

Cook the Gnocchi:

    Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually around 2-3 minutes until they float to the top. Drain and set aside.

      Sauté the Chicken:

        In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper. Add them to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

          Prepare the Sauce:

            In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and heavy cream. Stir well to combine and let it simmer for 3-4 minutes, allowing the sauce to thicken slightly.

              Add Sun-Dried Tomatoes and Spinach:

                Stir in the chopped sun-dried tomatoes, fresh spinach, and Italian seasoning. Continue to cook for an additional 2-3 minutes until the spinach wilts and the sauce is creamy and well-blended.

                  Combine Everything:

                    Add the cooked chicken back into the skillet along with the gnocchi. Toss everything together gently to coat it in the sauce. Mix in the grated Parmesan cheese and allow it to melt, stirring for another 1-2 minutes until everything is heated through.

                      Serve and Garnish:

                        Taste and adjust seasoning if needed. Serve hot, garnished with fresh basil if desired for an extra pop of flavor.
