Ingredients

1 lb (450g) potato gnocchi

1 tbsp olive oil

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 tsp dried basil

1 tsp sugar

Salt and pepper to taste

1 cup fresh spinach

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

Add Tomatoes and Cream: Pour in the crushed tomatoes and stir in the heavy cream. Mix well to combine the tomatoes and cream into a smooth sauce.

Season the Sauce: Add the dried basil, sugar, salt, and pepper. Let the sauce simmer for about 5-7 minutes until it thickens slightly. Stir occasionally to prevent sticking.

Incorporate Spinach: Add the fresh spinach to the sauce, stirring until it wilts down. This will only take a couple of minutes.

Combine with Gnocchi: Gently fold the cooked gnocchi into the creamy tomato sauce, ensuring each piece is well-coated.

Finish with Cheese: Sprinkle the grated Parmesan cheese over the gnocchi and stir until it melts and blends into the sauce. Taste and adjust seasoning if needed.

Serve: Plate the creamy tomato gnocchi and garnish with fresh basil leaves. Serve hot, and enjoy your delicious meal!
