12 oz (340g) pasta (fettuccine or penne works well)

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

1 cup freshly grated Parmesan cheese

1 cup fresh basil leaves, chopped

1 tablespoon lemon juice

Extra basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes and Cream: Stir in the diced tomatoes (with their juices), heavy cream, dried oregano, and red pepper flakes (if using). Bring the mixture to a gentle simmer, stirring occasionally for about 5-7 minutes, until it has thickened slightly.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat it in the creamy tomato sauce. If the sauce is too thick, add a bit of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
