4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon Italian seasoning, optional

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Spinach Mixture: In a medium-sized pan over medium heat, add the olive oil and sauté the minced garlic for about 1 minute until fragrant. Toss in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

      Mix the Filling: In a mixing bowl, combine the softened cream cheese, grated Parmesan cheese, shredded mozzarella cheese, cooked spinach, onion powder, salt, black pepper, and Italian seasoning (if using). Mix well until smooth and well combined.

        Prep the Chicken Breasts: Using a sharp knife, carefully cut a pocket into each chicken breast. Ensure not to cut all the way through; you want enough space to stuff the mixture in.

          Stuff the Chicken: Generously fill each chicken breast pocket with the creamy spinach mixture, using toothpicks to secure the opening if necessary.

            Sear the Chicken: In a large oven-safe skillet, heat a bit of olive oil over medium-high heat. Add the stuffed chicken breasts and cook for about 4-5 minutes on each side, until golden brown.

              Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/75°C).
