1 cup wild rice, rinsed

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

8 ounces mushrooms (button, cremini, or a mix), sliced

2 medium carrots, diced

2 celery stalks, diced

4 cups vegetable broth

2 cups water

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 cup heavy cream (or coconut cream for a dairy-free option)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until it becomes translucent. Stir in the garlic and cook for another minute until fragrant.

    Add Mushrooms, Carrots, and Celery: Incorporate the sliced mushrooms, diced carrots, and celery into the pot. Sauté the mixture for about 5-7 minutes, or until the mushrooms have released their moisture and softened.

      Stir in Wild Rice: Add the rinsed wild rice to the pot, stirring to combine all the ingredients.

        Add Liquids and Seasonings: Pour in the vegetable broth and water. Stir in the dried thyme, dried rosemary, and bay leaf. Season with salt and pepper. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low. Cover the pot and let the soup simmer for about 45-50 minutes or until the wild rice is tender and has absorbed most of the liquid.

            Finish with Cream: Remove the bay leaf and stir in the heavy cream (or coconut cream). Allow the soup to heat through for another 5 minutes. Taste and adjust seasoning as necessary.
