After a long day filled with work and errands, I found myself in the kitchen, eager to prepare a meal that would bring a sense of warmth and joy to my family. As the sun began to set, casting a golden hue across the countertops, I craved a dish that was not only delicious but also simple to prepare.

Creamy Lemon Orzo with Chicken and Spinach

Ingredients
  

1 cup orzo pasta

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 small onion, diced

4 cups fresh spinach

1 cup heavy cream

Zest and juice of 1 large lemon

1/2 cup grated Parmesan cheese

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional for spice)

Fresh parsley, chopped for garnish

Instructions
 

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the skillet and let it rest.

      Sauté Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Add Spinach: Gradually add the fresh spinach to the skillet, stirring until it wilts. This should take about 2-3 minutes.

          Make the Cream Sauce: Pour in the heavy cream, and stir to combine. Add the lemon zest, lemon juice, Parmesan cheese, dried thyme, and red pepper flakes, if using. Season with salt and pepper to taste. Allow the sauce to simmer for 3-5 minutes until it thickens slightly.

            Combine Ingredients: Slice the cooked chicken into strips and return it to the skillet. Add the cooked orzo and gently fold everything together to ensure the orzo is well coated in the creamy sauce.

              Serve: Remove from heat and garnish with freshly chopped parsley. Serve warm and enjoy the delightful flavors!
