8 oz. rotini pasta (or your choice of pasta)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

2 tbsp lemon juice

1 tsp dried oregano

Salt and pepper, to taste

Instructions
 

Begin by cooking the pasta according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

    In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, olives, feta cheese, red onion, and parsley. Toss gently to mix the ingredients without breaking the feta.

      In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, and a pinch of salt and pepper to create the dressing.

        Pour the dressing over the pasta salad and toss everything together until well combined. Adjust seasoning with additional salt and pepper if required.

          Cover the salad and refrigerate for at least 30 minutes to allow the flavors to merge and intensify.
