Creamy Corn Chowder

4 cups fresh or frozen corn kernels (about 6 ears of corn if using fresh)

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 red bell pepper, diced

4 cups vegetable or chicken broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons unsalted butter (or olive oil for a lighter option)

1 teaspoon thyme (fresh or dried)

1 teaspoon smoked paprika

Salt and pepper to taste

Chives or parsley for garnish

Instructions
 

Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and red bell pepper; sauté for 5-7 minutes until the onion is translucent.

    Add Garlic and Potato: Stir in the minced garlic and diced potatoes. Cook for an additional 2-3 minutes until the garlic is fragrant.

      Incorporate Corn and Broth: Add the corn kernels, smoked paprika, thyme, and the vegetable or chicken broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes or until the potatoes are tender.

        Blend for Creaminess: Carefully blend about half of the chowder using an immersion blender for a creamy texture while keeping some chunks. If you don't have an immersion blender, you can ladle half of the chowder into a regular blender, blend until smooth, and then return to the pot.

          Add Cream and Seasoning: Stir in the heavy cream (or coconut milk), and season with salt and pepper to taste. Let the chowder simmer for another 5 minutes to heat through and allow flavors to meld.

            Serve and Garnish: Ladle the chowder into bowls and garnish with chopped chives or parsley.
