Ingredients

1 medium head of cauliflower, cut into florets

1 tablespoon unsalted butter

1/2 cup heavy cream (or milk for a lighter version)

1 cup sharp cheddar cheese, grated

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook them for about 8-10 minutes, or until they are tender. Drain well and let them sit for a minute to remove excess moisture.

Blend the Ingredients: Transfer the drained cauliflower to a food processor. Add the butter, heavy cream, garlic powder, onion powder, and a pinch of salt and pepper. Blend until the mixture is smooth and creamy.

Incorporate the Cheese: While the food processor is running, gradually add the grated cheddar cheese. Blend until the cheese is fully incorporated into the cauliflower mash. Taste and adjust the seasoning with more salt and pepper if necessary.

Serve: Spoon the creamy cheddar cauliflower mash into a serving bowl. If desired, garnish with finely chopped chives or parsley for an added pop of color and flavor. Serve warm alongside your favorite protein or as a delicious standalone side.
