8 ounces fettuccine or penne pasta

2 tablespoons olive oil

1 pound shrimp, peeled and deveined

8 ounces andouille sausage, sliced

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage and cook for about 3-4 minutes until browned. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

        Cook the Shrimp: Add the shrimp to the skillet and sprinkle with Cajun seasoning and smoked paprika. Cook for about 2-3 minutes until the shrimp turn pink and are cooked through. Stir in the halved cherry tomatoes and let simmer for another 2 minutes.

          Make the Cream Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer and let it cook for a few minutes until slightly thickened. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
