Cold Tuna Pasta Salad with Dill

8 oz. tri-color rotini pasta

1 can (5 oz.) tuna in olive oil, drained

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup plain Greek yogurt

2 tbsp mayonnaise

1 tbsp Dijon mustard

2 tbsp fresh dill, chopped (or 1 tbsp dried)

Juice of 1 lemon

Salt and pepper to taste

Optional: 1/4 cup black olives, sliced

Optional: 1/4 cup feta cheese, crumbled

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the tri-color rotini and cook according to package instructions until al dente. Drain and rinse under cold water until cooled completely. This helps stop the cooking process and keeps the pasta firm.

    Prepare Ingredients: While the pasta is cooling, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Have your tuna ready to add.

      Make Dressing: In a large bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, fresh dill, lemon juice, salt, and pepper. Adjust seasoning to taste. The dressing should be creamy yet tangy.

        Combine: Add the cooled pasta to the dressing, followed by the drained tuna, cherry tomatoes, cucumber, red bell pepper, and red onion. If using, add the black olives and crumbled feta. Gently toss until all ingredients are coated with the dressing.

          Chill: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together.
