12 oz. tri-color rotini pasta

1 ½ cups canned black beans, rinsed and drained

1 cup sweet corn (canned or frozen)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

½ cup fresh cilantro, chopped

1 avocado, diced

1 jalapeño, seeded and minced (optional for heat)

½ cup feta cheese, crumbled (optional for richness)

⅓ cup olive oil

¼ cup lime juice (about 2 limes)

1 tablespoon honey

1 teaspoon ground cumin

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the tri-color rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside to cool completely.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, ground cumin, salt, and pepper until all ingredients are well combined. Adjust seasoning to taste.

      Combine the Salad Ingredients: In a large mixing bowl, combine the cooled pasta, black beans, sweet corn, red bell pepper, cherry tomatoes, red onion, cilantro, jalapeño (if using), and avocado. Toss gently to mix.

        Dress the Salad: Pour the dressing over the pasta salad and toss until everything is well coated. If you’re adding feta cheese, sprinkle it on top and give it a gentle toss to incorporate.
