8 oz rice noodles (or any preferred noodles)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

1/4 cup green onions, chopped

1/4 cup fresh cilantro leaves

1/4 cup chopped peanuts (for garnish)

1 tablespoon sesame seeds (for garnish)

Peanut Sauce:

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

1 tablespoon grated ginger

2 cloves garlic, minced

1-3 tablespoons water (for desired consistency)

Juice of 1 lime

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the rice noodles and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking. Set aside.

    Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and lime juice. Gradually add water, one tablespoon at a time, until you reach the desired consistency for drizzling.

      Combine Ingredients: In a large mixing bowl, combine the cooked noodles, shredded carrots, bell pepper, cucumber, and half of the chopped green onions and cilantro. Pour the peanut sauce over the mixture and toss until everything is evenly coated.
