1 cup orzo pasta

2 cups water

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 red bell pepper, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Cook the Orzo: In a medium saucepan, bring 2 cups of water to a boil. Add the orzo pasta and a pinch of salt. Cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and rinse under cold water to cool it down. Set aside.

    Prepare the Veggies: While the orzo is cooking, chop the cucumber, cherry tomatoes, red onion, and red bell pepper into small pieces. Place these in a large mixing bowl.

      Add the Olives and Cheese: Stir in the Kalamata olives and crumbled feta cheese to the bowl with the chopped vegetables.

        Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

          Combine Everything: Add the cooled orzo to the large mixing bowl with the veggies and cheese. Pour the dressing over the top and toss everything gently until well mixed and evenly coated.

            Garnish and Chill: Sprinkle the chopped fresh parsley on top for added color and flavor. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

              Serve: Once chilled, give the salad a good toss and serve fresh as a delightful side dish or a light main course.
