Ingredients

2 medium zucchinis, grated

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

4 large eggs

1 cup milk

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 cup chopped green onions (optional)

Cooking spray or muffin liners

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). If using muffin liners, prepare your muffin tin by lining it with liners or spraying with cooking spray.

Prepare Zucchini: In a medium bowl, grate the zucchinis. Place the grated zucchini in a clean kitchen towel or cheese cloth and squeeze to remove excess moisture. This step is crucial to prevent the muffins from being soggy.

Mix Wet Ingredients: In a large bowl, whisk together the eggs and milk until well combined.

Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, salt, pepper, garlic powder, and onion powder.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

Add Zucchini and Cheese: Fold in the grated zucchini, shredded cheese, and chopped green onions (if using) until evenly distributed.

Fill Muffin Tin: Using a spoon or a measuring cup, divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the quiche muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature as a delicious snack or breakfast option!
